Khoba Roti

Khoba Roti is more than just bread; it’s a piece of Rajasthani culinary art. This roti turns every meal into a cultural experience with its iconic dimpled design. Made with Hathi Brand 100% Whole Wheat Chakki Atta, you can enjoy the true rustic essence of Rajasthan’s kitchens while adding a modern touch of nutrition to your meals. A roti with each little ‘khoba’ or dent brimming with rich ghee, get ready to soak up the flavors of your favorite curry. Whether served with Gatte ki Sabzi, Ker Sangri, or a simple dal, Khoba Roti is an edible masterpiece as hearty as its traditions.

Ingredients

  • 2 cups Hathi Brand 100% Whole Wheat Chakki Atta
  • ½ teaspoon carom seeds (ajwain)
  • Salt to taste
  • Ghee (for kneading and brushing)
  • Water (for kneading)

Method

  • Combine Hathi Brand Atta, carom seeds, and salt in a large bowl.
  • Gradually add water and knead the mixture into a firm dough. Add a teaspoon of ghee while kneading for extra flavor.
  • Divide the dough into large portions and roll them into balls.
  • Roll out each ball into a thick roti, about 1/2 inch thick.
  • Using your fingers, create small indentations (khoba) all over the surface of the roti. This design helps the ghee seep into the bread, making it flavorful.
  • Heat a tawa (griddle) on medium heat and place the roti on it.
  • Cook the roti on low heat, ensuring it cooks evenly. Flip the roti and press lightly with a cloth or spatula to help it cook from the inside.
  • Once both sides are golden brown, generously brush ghee over the top and serve hot.

Suggested Pairings:

  • Gatte ki Sabzi: A Rajasthani curry made with gram flour dumplings cooked in a spicy yogurt-based gravy.
  • Ker Sangri: A traditional desert vegetable dish spiced with dried ker berries and sangri beans.
  • Panchmel Dal: A protein-rich, flavorful dal made from a mix of five lentils.
  • Lahsuni Chutney: A spicy garlic chutney that pairs perfectly with Khoba Roti.

Rich in flavor and tradition, Khoba Roti, with its signature dimples, is a must-try for anyone wanting to experience authentic Rajasthani cuisine.
