Ingredients

  • 1 cup Hathi Brand 100% Whole Wheat Chakki Atta
  • ½ cup grated bottle gourd (lauki)
  • ½ cup fenugreek leaves (methi), finely chopped
  • 2 tbsp semolina (rava)
  • 1 tbsp ginger-green chili paste
  • ½ tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin seeds
  • 1 tbsp sesame seeds
  • 2 tbsp curd
  • 1 tbsp lemon juice
  • Salt to taste
  • 2 tbsp oil (for tempering)
  • A pinch of asafoetida (hing)
  • Water as needed.

Method

  • Prepare the dough: In a mixing bowl, combine atta, semolina, grated bottle gourd, fenugreek leaves, ginger-chili paste, turmeric, red chili powder, sesame seeds, lemon juice, curd, and salt. Add water gradually to form a soft, pliable dough.
  • Shape the muthiya: Divide the dough into small portions and roll them into cylindrical shapes.
  • Steam the muthiya: Place the cylinders in a greased steamer and steam for 15 minutes. Allow them to cool slightly before slicing into bite-sized pieces.
  • Prepare the tempering: Heat oil in a pan. Add cumin seeds, sesame seeds, and asafoetida. Sauté for a few seconds.
  • Fry the muthiya: Add the steamed pieces to the pan and sauté until golden and crispy.
  • Serve hot: Garnish with coriander leaves and serve with mint chutney or ketchup.
