Ingredients
- 1 cup Hathi Brand 100% Whole Wheat Chakki Atta
- ½ cup grated bottle gourd (lauki)
- ½ cup fenugreek leaves (methi), finely chopped
- 2 tbsp semolina (rava)
- 1 tbsp ginger-green chili paste
- ½ tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp cumin seeds
- 1 tbsp sesame seeds
- 2 tbsp curd
- 1 tbsp lemon juice
- Salt to taste
- 2 tbsp oil (for tempering)
- A pinch of asafoetida (hing)
- Water as needed.
Method
- Prepare the dough: In a mixing bowl, combine atta, semolina, grated bottle gourd, fenugreek leaves, ginger-chili paste, turmeric, red chili powder, sesame seeds, lemon juice, curd, and salt. Add water gradually to form a soft, pliable dough.
- Shape the muthiya: Divide the dough into small portions and roll them into cylindrical shapes.
- Steam the muthiya: Place the cylinders in a greased steamer and steam for 15 minutes. Allow them to cool slightly before slicing into bite-sized pieces.
