 As winter chills are ready to set in, there is nothing quite like the joy of biting into a warm Malpua drenched in sweet syrup. This traditional Indian dessert, made with Hathi Brand 100% Whole Wheat Chakki Atta, brings a nutritious twist to a classic favorite. Infuse these soft, golden pancakes with the warmth of cardamom and fennel, lightly fry them to perfection, and then soak them in fragrant syrup. Ingredients

  • 1 cup Hathi Brand 100% Whole Wheat Chakki Atta
  • ¼ cup semolina (for extra crispiness)
  • ½ cup sugar
  • ½ cup milk (adjust for consistency)
  • ¼ teaspoon fennel seeds
  • ¼ teaspoon cardamom powder
  • Ghee (for frying)
  • Sliced almonds and pistachios (garnish).

For the Sugar Syrup:

  • 1 cup sugar
  • 1/2 cup water
  • A few saffron strands (optional)
  • 1/4 teaspoon cardamom powder

Method

  • In a bowl, mix Hathi Brand Atta, semolina, sugar, cardamom powder, and fennel seeds.
  • Gradually add milk, whisking the mixture into a smooth batter. The consistency should be like pancake batter, neither too thick nor too thin.
  • Let the batter rest for 15 minutes.
  • Meanwhile, prepare the sugar syrup by heating sugar and water in a pan. Add saffron strands and cardamom powder. Once the sugar dissolves, let it simmer until it thickens slightly. Set aside.
  • Heat ghee in a shallow pan for frying.
  • Pour a small ladleful of the batter into the hot ghee, shaping it into a small, round pancake. Fry on low-medium heat until golden and crispy on both sides.
  • Dip the fried Malpua in warm sugar syrup for a few seconds and remove.
  • Garnish with sliced almonds and pistachios before serving.

Deliciously crispy on the outside and soft on the inside, Malpua brings the warmth of winter in every bite. Pair with fresh rabri for an extra indulgent treat.
